Unlike cylinder mills, the <strong>seed is not crushed but actually rolled between the millstones<\/strong>. Unlike more traditional stone mills, <strong>it&#8217;s not the weight of the upper millstone that crushes the grain<\/strong>, but a spring system and micrometric adjustment between the millstones that ensure the grain is unrolled.<\/p>\n\n\n\n<p id=\"viewer-9dti6\">This \u2018unwinding\u2019 ensures two essential stages:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>preserves all the qualities of the seed germ<\/strong><\/li>\n\n\n\n<li><strong>an extraction rate of over 80% in a single pass<\/strong><\/li>\n<\/ul>\n\n\n\n<p id=\"viewer-524g9\">At Astr\u00e9ia, we scrupulously respect the invention, <strong>we haven&#8217;t changed a thing. We cut our own millstones according to the Astri\u00e9 brothers&#8217; method<\/strong>, we monitor the process and we use <strong>Granit from Sidobre (Tarn)<\/strong> as Andr\u00e9 and Pierre Astri\u00e9 did.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"viewer-66bok\"><strong>What difference does a \u2018single pass\u2019 extraction rate make?<\/strong><\/h2>\n\n\n\n<p id=\"viewer-28fis\">That&#8217;s because such a high rate means that the seed is not heated or oxidised by passing several times between millstones or through cylinders. So <strong>it retains all its nutritional qualities and its germ is intact in the flour.<\/strong><\/p>\n\n\n\n<p id=\"viewer-3pgv\">The result is a <strong>very high quality, local flour that you can now make the most of<\/strong>. But with extraction and bagging (optional) and a continuous supply of wheat, we can <strong>make up to 6 tonnes of flour a month<\/strong>. That&#8217;s more than the quota (35 tonnes of soft wheat\/year).<\/p>\n\n\n\n<p id=\"viewer-6ae9\"><strong>For the 100cm mill:<\/strong><\/p>\n\n\n\n<p id=\"viewer-2906d\"><strong>Yields were doubled. That&#8217;s around 12 tonnes of flour per month.<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"700\" height=\"934\" src=\"https:\/\/www.moulin-astreia.com\/wp-content\/uploads\/2024\/08\/image-19.jpeg\" alt=\"\" class=\"wp-image-640\" srcset=\"https:\/\/www.moulin-astreia.com\/wp-content\/uploads\/2024\/08\/image-19.jpeg 700w, https:\/\/www.moulin-astreia.com\/wp-content\/uploads\/2024\/08\/image-19-225x300.jpeg 225w\" sizes=\"auto, (max-width: 700px) 100vw, 700px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"viewer-8nkmg\"><strong>What is the \u2018extraction and bagging\u2019 option?<\/strong><\/h2>\n\n\n\n<p id=\"viewer-f4mru\">We&#8217;ve had a lot of questions about this option, and we&#8217;ll be writing an article about it soon.<\/p>\n\n\n\n<p id=\"viewer-bj30\"><strong>Automatic extraction is an option: an endless screw housed at the bottom of the sifting chamber automatically extracts the flour from the sifting chamber.<\/strong><\/p>\n\n\n\n<p id=\"viewer-4kgal\">This means you don&#8217;t have to remove the flour by hand. It comes straight out of the sifting machine. This option can be chosen on its own, without bagging (the automatic bagging of your flour).<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"700\" height=\"934\" src=\"https:\/\/www.moulin-astreia.com\/wp-content\/uploads\/2024\/08\/image-18.jpeg\" alt=\"\" class=\"wp-image-639\" srcset=\"https:\/\/www.moulin-astreia.com\/wp-content\/uploads\/2024\/08\/image-18.jpeg 700w, https:\/\/www.moulin-astreia.com\/wp-content\/uploads\/2024\/08\/image-18-225x300.jpeg 225w\" sizes=\"auto, (max-width: 700px) 100vw, 700px\" \/><\/figure>\n\n\n\n<p id=\"viewer-6ueum\"><strong>The bagging ramp is used to bag your flour as it comes out of the sifting machine<\/strong>.
