Three concepts are fundamental: freshness, taste and composition. The importance of freshness should lead us to promote a short circuit between production and distribution. The importance of composition should also be taken into account, especially as there is an unmet need to know the precise characteristics of the breads on offer. This reflects the consumer&#8217;s constant desire to know and understand the product they are consuming. More than anywhere else, the place where organic products are bought should be a place where products are communicated.<\/p>\n\n\n\n<p id=\"viewer-6jln4\"><strong>Loyalty to organic bread and increased consumption<\/strong><\/p>\n\n\n\n<p id=\"viewer-9nav\">53% of organic shop customers and bread consumers eat exclusively or mostly organic bread, and 20% prefer non-organic
